My Favorite Way to Cook Corn

My friend Chef Sean is from Nebraska...and he taught me the most fabulous way to roast Corn! Fill your sink with water, clean your ears of corn as much as possible without removing the husk. Let them sit in the water. Now, turn on your oven to 400F degrees. Once your oven reaches the temperature, put your corn on a tray (with their husks), and roast for 30 minutes. Your house will smell amazing!

We love serving them with a Huancaina Sauce: Place in your blender 2 Aji Amarillo (seeded and veins removed) (you can find it at Lee Lee's frozen section), 1/2 tsp of crushed garlic, salt, pepper, 12 oz. of evaporated milk (reserve the rest, 2 TBSP. canola oil. Blend well and start adding 3 oz of Queso fresco (crumbled). Blend till smooth. to make it thicker, you can add more cheese...to make it thinner, add more milk.

Easier is to place the corn un-shucked in the microwave on full for 5 minutes (one ear) or 6 minutes (two ears). When done, cut the corn off at the stalk end at the point where it achieves full diameter. Then squeeze the ear out like toothpaste from a tube. No silk, no shucking, and the corn stays moist. The sauce sounds very tasty.
